Chocolate Protein Pancakes

If there is one thing I love, it’s PANCAKES! Sundays in our house has always been reserved for Pancake/Waffle Sunday, but I found the kids were wired right after and I was hungry again within an hour of breakfast (or worse…left bloated and sluggish all day). So, the search began for a protein recipe that still tasted delicious, the kids would eat, and was balanced to keep me going during all of my soccer mom duties. What did I come up with? A yummy, chocolatey, fluffy pancake that not only tastes delicious, but has a good balance of all the macronutrients my body needs to feel satisfied and energetic after breakfast. img_2873.jpg

Chocolate Protein Pancakes

1scoop Protein Powder (Vegan or Whey)

1/4cup Flour (White or Wheat or GF Alternative)

2tsp Baking Powder

2tsp Cocoa Powder

1 Egg White

1/3cup Almond Milk

Mix all ingredients until smooth. Add 1tbsp Coconut Oil to pan and heat until sizzling. Recipe makes 3 large pancakes (or 1 waffle if you have a waffle iron)

You can add any toppings that you prefer. My favorite is to add a dollop of Greek Yoghurt in between each pancake and top with your favorite berries. For an added treat, I like to shave 75% dark chocolate on the top!

Total Calories = 300; Macronutrients: Protein (25g), Carbohydrates (29g), Fat (9g).
